This book is so much more than a cookbook, it is truly an encyclopedia of traditional Japanese superfood ingredients and recipes! This book imparts generations of knowledge and history on nutritive qualities of Japanese foods, notably sea vegetables and fermented foods.I so appreciate Chef Yumi Komatsudaira for sharing her wisdom and delicious family recipes! I grew up enjoying the Japanese dishes my grandmother made and she taught me to prepare them using “a little of this and a little of that” with the Japanese ingredients she had available in the 80’s and 90’s in North Carolina, before the days of Amazon.Chef Yumi’s book has taught me so much more about traditional Japanese ingredients and culinarily arts… words cannot express how I am forever grateful! A Must-Have Cookbook!!
I ordered Japanese Super Foods after sampling author & chef Yumi Komatsuda’s wonderful cooking at Enoteca Maria on Staten Island. I was blown away by the clean, fresh, and elegantly simple presentation of her native Japanese cuisine, and I couldn’t wait to do a deeper dive into her book. Having read it cover to cover, it’s honestly my new favorite cookbook, although it’s so much more than recipes and beautiful food photography, which are abundant. I came away with an education on the medicinal benefits of the “super foods” featured in the book. Healthy eating never looked so good! Also featured is some context and delightful back story into Yumi’s cooking origins, inspiration, and the family associated with each dish, even further heightening my connection to these delicious recipes. I highly recommend it!

My family (with two young children) and I have had the distinct pleasure to have enjoyed Yumi’s cooking at the restaurant Enoteca Maria in Staten Island, NYC and this cookbook is a direct extension of her wonderful skill as a chef.Japanese cooking is complex, which is why the flavors are so dynamic, but through her book, Yumi explains very clearly how you can eat healthy, flavorful food on a regular basis by prepping dashi and broadening your palette. For those of you who have not yet experienced her cooking, you can enjoy her recipes from afar through some very easy steps. I have learned so much!

This is truly a cookbook to treasure. Before mentioning the wonderful recipes it is worth noting that the first 60 pages offer an engaging resource guide to the base ingredients in Japanese cooking. This really clarifies the various types of items used and how to prepare, store and to use them in recipes. I especially love the pages detailing the dashi broth, shio koji, and the variety of soy-based sauces and dressings. With the basic items I was surprised by what I can make at home instead of buying in the store.So far, I have made and loved the Glazed Chicken Meatballs, Chicken Nuggets/Karaage, Kabocha Miso Ginger Bisque, and the Wakame and Broccoli Rabe Salad. Each was delicious. Next up are the Mushroom Hot Pot, Salted Grilled Salmon Rice Bowl, and Mackerel Braised in Miso. The book is packed with enticing recipes and really shows how passionate the author is about her native cuisine and the craft of food preparation. So grateful to have this book!

This book is a great Japanese cookbook. You can learn about the wonderful ingredients of Japan. And best of all, you can use kombu, one of Japan’s great ingredients, to create delicious dishes. I am Japanese, but I was reminded of the wonderfulness of Japanese food.
