Spicy Butternut Squash and Chickpeas

Chickpeas and butternut squash make this dish hearty enough for a main course, and the spinach gives it some color. Leftover stew is delicious the next day served with some crusty bread.

1. In the Instant Pot, combine the chickpeas, onion, tomato paste, garlic, cumin, salt, turmeric, pepper, paprika, cinnamon, and water.

2. Secure the lid on the pot. Close the pressure-release valve. Select PRESSURE COOK/MANUAL and set the pot at High pressure for 35 minutes. At the end of the cooking time, use a quick release to depressurize.

3. Add the frozen butternut squash and the spinach. Close the lid. Select PRESSURE COOK/MANUAL and set the Instant Pot at High pressure for 0 minutes. At the end of the cooking time, use a quick release to depressurize.

4. Open the lid and stir the stew. The butternut squash will disintegrate, making a thick purée for the chickpeas. Stir in the lemon juice. Transfer to serving bowls and serve hot.

NOTE : If you would like to keep the butternut squash in whole chunks for this dish, steam it in the microwave or on the stovetop until it is tender-crisp and add it to the cooked chickpeas just before serving.

Ingredients:

1 cup dried chickpeas, soaked in hot water for 1 hour

1 cup diced onion

2 tablespoons tomato paste

1 tablespoon minced fresh garlic

1 ½ teaspoons ground cumin

1½ teaspoons kosher salt, or to taste

1 teaspoon ground turmeric

1 teaspoon freshly ground black pepper

½ teaspoon smoked paprika

¼ teaspoon ground cinnamon

2½ cups water

16 ounces frozen butternut squash, diced

4 cups chopped fresh baby spinach

2 tablespoons freshly squeezed lemon juice

    Urvashi Pitre is a Game-Changer!
    I have had my InstaPots for 4 or 5 years now, and have never been so in love as I am since finding Urvashi Pitre’s cookbooks! I have almost all of them, if not all! Reading them is like chatting with a down to earth friend who makes cooking seem and feel easy!This cookbook starts with an bit about her journey with this dietary style, followed by an intro into using an InstaPot along with frequently asked questions. She has really helped me move our families diet closer to cleaner eating than we’ve managed thus far. Her cookbooks are like taking a mini cooking course by a good friend! I have never produced so many well flavored and enjoyable recipes from one book. Move over other cookbooks here comes Urshi Pitre!I’ve tried more than a dozen Recipes and absolutely every recipe I’ve tried has been a homerun! I have raved so much to my two sisters that each of them have purchased one or more themselves and now we report to each other each time we try a recipe. So fun! And honestly, no joke, there has not been a recipe yet that we haven’t loved – not just liked, but loved!Several other features of these cookbooks I like are: nutritional counts per serving for every recipe; great pictures; typical/common ingredients with easy to follow instructions; and incredible flavor combos! One of my most favorite parts is an index near the back of each book that lists every recipe and how it conforms or doesn’t conform to various dietary needs. This has become invaluable to me as recently I have been placed on multiple dietary restrictions. But beyond that, Urvashi has brought joy back to being able to eat the same things with my family without anyone feeling like they are missing out on something! I never realized how disconnecting it is for persons to have to eat differently at a shared meal. It zapped the joy of the meal and the sense of being connected to one another. Urvashi’s cookbooks have returned that joy with this index and these amazing recipes!So, if you have an InstaPot or are giving an InstaPot as a gift including one or all of Urvashi’s cookbooks would bring the gift to an entirely new level! I’m thinking regular gift giving occasions but also baby showers (new moms need to eat well, with simplicity to the making could even find time to nurse, feed or change diapers while the pot works its magic). Wedding gift/showers, new home owners, first time on their own children, and so on.

    AMAZING COLLECTION OF UNIQUE AND FABULOUS RECIPIED – AGAIN!
    I am a total fan of all of Urvashi’s cookbooks and this one absolutely does not disappoint! One of our favorites is Chicken Karahi (pg 82) so much flavor in a simple chicken dish! I think that is what I enjoy most about Urvashi’s books. Every recipe is as simple as possible, well researched and taste tested and pacts a huge flavor punch w/ a handful of simple ingredients that I usually already have on hand. I also love that most of the recipes have lovely pictures. This really helps when you are not familiar with a dish…wanting to try something new, but are on the fence…as they say a picture is worth a thousand words! Some other favorites are Moroccan Lamb Tagine (pg 107), Lebanese lentils and basmati rice (pg 204–this one reminds of the rice @Aladdin’s the Lebanese cafe where my daughter is a server) and French Garlic Chicken (pg 79). Cannot wait to try more of the recipes in the book!

    Has some tasty looking vegetarian recipes
    This is the third cookbook I’ve bought by this author. Everything I’ve made from them has turned out well. Great photos, well laid out using generous sizes of type (unlike too many others). A good purchase.

    Great Recipes!
    I have been making Mediterranean meals for a few years, but have gotten lazy. This cookbook changed all that. Easy recipes with simple ingredients. Every meal has been SO good, light but filling. Added bonus are the all the helpful notes and information written with humor, so it’s entertaining as well. I’m buying one for my niece for Christmas!

    This one’s a keeper – easy, tasty recipes
    I love this cookbook. It’s well-written, the recipes are easy to follow and tasty. The Mediterranean Eggplant Stew is in my weekly recipe rotation. 10/10 would recommend for anyone looking for fast and delicious Mediterranean Diet recipes for InstaPot.

    Good book for healthy diet
    I bought two and gave,one for a gift. Good recipes for those wanting a healthier diet and like to use instant pot. Many recipes with no meat or small amounts of,meat.

    Disappointed
    I was looking so forward to getting this cookbook. Reading the introduction she says, use only olive oil, no need to sauté, limit meat, eat more fatty fish, no need to soak beans. Most of the recipes use meat, many use butter, ghee, or other oil. Sugar should be omitted, however many of her recipes use white sugar. Many recipes call for sautéing and soaking beans. I only wish she would have more options to make her recipe’s vegetarian. I just wonder if she didn’t adapt her keto recipes to Mediterranean? I paid extra for spiral bound, it’s a beautiful book, just not true Mediterranean.

    She is certainly addictive, all I do now is eat from her books . I bought myself an air fryer because she had books on them. Not in this book but I love her paprika fish soup, her butter curry chicken is to die for . Got all her books now . Been cooking new potatoes in cumin corriander ect just lush . Oh that might not be in this book . Just love it all , she is amazing. Restaurant quality food in my home with some of her recipes Yum .

    I haven’t made anything from here that wasn’t amazing! The flavours are unreal My family loved it so much I had to buy my daughter and son-in-law a copy of their own. Everything is really easy to make too which is great after a long shift at work easy and fast
